Optimalisasi Kemandirian Ibu Hamil melalui Inovasi Kukis Ikan Kembung untuk Pencegahan Stunting Desa Pagedangan Udik

ABSTRAK

 

Stunting merupakan masalah gizi kronis yang masih tinggi di Indonesia, termasuk di Desa Pagedangan Udik, Kecamatan Kronjo, Kabupaten Tangerang. Salah satu upaya pencegahan stunting adalah dengan optimalisasi asupan gizi ibu hamil melalui pemanfaatan sumber daya lokal, seperti ikan kembung yang kaya protein, omega-3, kalsium, dan zat besi. Kegiatan pengabdian masyarakat ini bertujuan untuk meningkatkan pengetahuan gizi, keterampilan pengolahan pangan local berupa kukis ikan kembung, serta strategi pemasaran produk olahan kukis ikan kembung bagi ibu hamil dan kader posyandu. Metode yang digunakan meliputi penyuluhan gizi seimbang, pelatihan pembuatan dan pengemasan kukis ikan kembung dengan e-modul dan video tutorial, serta workshop branding produk melalui media sosial dan toko online. Kegiatan diikuti oleh 47 peserta (40 ibu hamil dan 7 kader). Hasil menunjukkan peningkatan signifikan pengetahuan gizi peserta dari 19% menjadi 96% kategori baik setelah penyuluhan dan kegiatan ini. Keterampilan pengolahan kukis ikan kembung meningkat, dan peserta mampu memproduksi serta mengemas produk secara mandiri. Workshop branding membuka peluang pemasaran digital, meningkatkan nilai tambah produk, dan memperluas potensi usaha rumah tangga. Program ini berhasil mengintegrasikan edukasi gizi, keterampilan praktis, dan pemberdayaan ekonomi berbasis potensi lokal, sehingga berkontribusi pada pencegahan stunting sekaligus kemandirian keluarga dalam pemenuhan gizi. Disarankan kegiatan serupa dikembangkan di wilayah lain dengan potensi lokal berbeda, serta dilakukan pendampingan berkelanjutan untuk menjamin keberlangsungan program.

ABSTRACT

 

Stunting remains a chronic nutritional problem with a high prevalence in Indonesia, including in Pagedangan Udik Village, Kronjo District, Tangerang Regency. One of the efforts to prevent stunting is optimizing maternal nutrition intake through the utilization of local resources such as mackerel fish, which is rich in protein, omega-3, calcium, and iron. This community service program aimed to improve nutritional knowledge, local food processing skills, and product marketing strategies for mackerel fish cookies among pregnant women and Posyandu cadres. The methods included balanced nutrition education, training on mackerel fish cookie production and packaging using e-modules and video tutorials, as well as a product branding workshop through social media and online stores. The program involved 47 participants (40 pregnant women and 7 cadres). The results showed a significant increase in participants’ nutritional knowledge from 19% to 96% in the “good” category after the education session. Skills in processing mackerel fish cookies improved, enabling participants to independently produce and package the products. The branding workshop expanded digital marketing opportunities, enhanced product value, and opened potential household business prospects. This program successfully integrated nutrition education, practical skills, and economic empowerment based on local resources, contributing to stunting prevention and family self-reliance in nutrition fulfillment. It is recommended that similar programs be developed in other regions with different local potentials, accompanied by ongoing mentoring to ensure program sustainability.
