Peningkatan Keanekaragaman Pangan melalui Pelatihan Dimsum Ikan Nila pada Kelompok Usaha Pangan Lokal di Desa Bebetin, Kecamatan Sawan, Kabupaten Buleleng

ABSTRAK

 

Desa Bebetin, Kecamatan Sawan, Kabupaten Buleleng memiliki potensi sumber daya perikanan air tawar yang dapat dikembangkan menjadi produk pangan bernilai tambah melalui diversifikasi olahan ikan nila. Namun, kelompok usaha pangan lokal masih menghadapi keterbatasan variasi produk dan strategi pemasaran yang berdampak pada rendahnya peluang peningkatan pendapatan. Kegiatan pengabdian kepada masyarakat ini bertujuan meningkatkan pengetahuan, keterampilan, pemasaran, dan omzet usaha melalui pelatihan pembuatan dimsum ikan nila. Metode yang digunakan meliputi penyuluhan, pelatihan, praktik produksi, pendampingan, serta evaluasi melalui pre-test dan post-test, observasi keterampilan praktik, wawancara, dan analisis omzet usaha. Kegiatan melibatkan 10 anggota Kelompok Usaha Pangan Lokal di Desa Bebetin. Hasil kegiatan menunjukkan peningkatan pemahaman peserta yang ditunjukkan oleh kenaikan nilai rata-rata dari 41,25 pada pre-test menjadi 78,75 pada post-test atau meningkat sebesar 91,0%. Keterampilan diversifikasi produk juga meningkat dengan kenaikan nilai praktik dari 3,0 menjadi 4,28 (skala 5) atau sebesar 42,7%. Program menghasilkan produk baru berupa dimsum ikan nila dengan berbagai variasi bentuk, ukuran, serta kemasan yang lebih terstandar. Dari aspek pemasaran, kelompok berhasil memperluas kanal promosi, menerapkan pencatatan pesanan, dan menyusun strategi penjualan yang lebih terarah. Dampak ekonomi ditunjukkan oleh peningkatan omzet kelompok dari Rp4.000.000 per bulan menjadi Rp8.000.000 per bulan atau meningkat sebesar 100%. Selain itu, volume penjualan dimsum mencapai 240–540 porsi per bulan dengan frekuensi pesanan 2–4 kali per minggu. Dengan demikian, pelatihan dan pendampingan pembuatan dimsum ikan nila terbukti efektif dalam meningkatkan kapasitas kelompok usaha, memperluas diversifikasi produk pangan lokal, dan meningkatkan pendapatan usaha secara berkelanjutan.

ABSTRACT

 

Bebetin Village, Sawan District, Buleleng Regency has considerable freshwater fishery resources that can be developed into value-added food products through tilapia diversification. However, local food business groups face limitations in product variation and marketing strategies. This community service program aimed to improve participants’ knowledge, skills, marketing capacity, and business income through training on tilapia fish dimsum production. Method: The program involved counseling, hands-on training, production assistance, and evaluation using pre-test and post-test assessments, practical skill observations, interviews, and business turnover analysis. A total of 10 members of a local food business group participated in the activity. Participants’ knowledge significantly increased, with average scores rising from 41.25 in the pre-test to 78.75 in the post-test (91.0% increase). Practical skills improved from an average score of 3.0 to 4.28 on a 5-point scale (42.7% increase). The program successfully introduced new diversified products, including tilapia fish dimsum with improved shape, size consistency, and packaging quality. Marketing capacity improved through expanded promotional channels, simple order-recording systems, and more structured sales strategies. Economically, the group’s monthly turnover increased from IDR 4,000,000 to IDR 8,000,000 (100% increase). Furthermore, dimsum sales reached 240–540 portions per month with an order frequency of 2–4 times per week. Training and mentoring in tilapia fish dimsum production effectively enhanced the capacity of local food business groups, promoted food diversification, and increased business income sustainably.
