IDENTIFIKASI CEMARAN BAKTERI Eschericha coli PADA MINUMAN TRADISIONAL DI PASAR PRINGSEWU

Abstract


Indonesia memiliki banyak jenis minuman tradisional yang digemari olah masyarakat, seperti cendol dan dawet. Masalah yang ditemui pada minuman tradisional adalah higenitas dalam proses pembuatannya. Tujuan dari penelitian ini adalah untuk mengidentifikasi kontaminasi bakteri E. coli pada sampel minuman tradisional di pasar pringsewu. Sampel yang digunakan dalam penelitian ini adalah cendol dan dawet yang di kumpulkan dari pasar pringsewu. This research uses samples of traditional drinks (cendol and dawet). Penelitian ini menggunakan metode most probable number (MPN) yang diawali dengan uji penduga, uji penguat, uji pelengkap dan uji biokimia. Hasil peneltiian menunjukkan berdasarkan uji penduga dan penguat diperoleh nilai MPN kontaminasi bakteri dalam sampel adalah ≥ 1.100, hasil ini melebihi ambang batas yang ditentukan oleh kementrian kesehatan Indonesia untuk kualitas air minum. Uji pelengkap menunjukkan 4 dari 5 sampel koloni bakteri berwarna hijau metalik yang diduga merupaka E. coli, namun hasil uji biokimia menunjukkan bahwa bakteri tersebut bukan E. coli. Hasil ini diduga disebabkan karena adanya bakteri lain yang memiliki karakteristik mirip seperti E. coli saat dilakukan uji pelengkap. Kesimpulan dari penelitian ini adalah sampel minuman pada penelitian ini memiliki kontaminasi bakteri yang terlalu tinggi melebihi batas dari kementrian kesehatan sehingga tidak layak diminum.
