Pemberdayaan Mahasiswa Kimia UNJ sebagai Agen Edukasi Sebaya Pencegahan Diabetes Melitus Tipe 2 Berbasis Uji Proksimat Pangan Fermentasi Kedelai

ABSTRAK
Peningkatan kasus diabetes melitus tipe 2 (DMT2) di kalangan remaja merupakan tantangan kesehatan global yang terus berkembang. Produk pangan hasil fermentasi kedelai yaitu tempe, oncom merah, oncom hitam, dan tauco berpeluang difungsikan sebagai pangan fungsional pencegah DMT2 yang bersumber dari kearifan lokal, meskipun tingkat kesadaran masyarakat terhadap potensi tersebut belum banyak diteliti. Kegiatan Pengabdian kepada Masyarakat (PkM) ini dirancang untuk memperkuat kapasitas mahasiswa Prodi Kimia Universitas Negeri Jakarta (UNJ) dalam berperan sebagai agen edukasi pencegahan DMT2 yang bersumber dari hasil riset pangan fermentasi kedelai bagi kalangan remaja. Rangkaian kegiatan diawali dengan uji proksimat terhadap produk fermentasi kedelai, dilanjutkan dengan pre-test, pemaparan materi, pelatihan pembuatan poster ilmiah, serta post-test yang melibatkan 65 mahasiswa. Tingkat keberhasilan program diukur melalui gain ternormalisasi ⟨g⟩, penilaian berbasis rubrik poster, dan kuesioner umpan balik peserta. Temuan menunjukkan bahwa oncom hitam memiliki kandungan protein dan lemak paling tinggi diantara produk yang diuji. Delapan belas dari 20 butir pengetahuan mencatatkan gain berkategori tinggi (⟨g⟩ ≥ 0,7). Keseluruhan poster yang dihasilkan oleh 16 kelompok memperoleh nilai baik hingga sangat baik (skor 3–4). Sebanyak 96,92% peserta menyatakan kepuasan tinggi dan bersedia merekomendasikan program ini kepada pihak lain. Dengan capaian tersebut, PkM ini terbukti berhasil meningkatkan pemahaman mahasiswa terhadap DMT2 serta data proksimat pangan fermentasi kedelai, dari kategori rendah-sedang menjadi tinggi, sekaligus membekali mereka dengan kompetensi komunikasi sains untuk menyosialisasikan pencegahan DMT2 kepada remaja melalui media poster ilmiah.

ABSTRACT
The rising incidence of Type 2 Diabetes Mellitus (T2DM) among adolescents constitutes an escalating global health concern. Soy-based fermented foods, namely tempeh, red oncom, black oncom, and tauco, represent promising preventive functional foods rooted in local wisdom, although public awareness regarding their utilization has rarely been examined. This community service program (PkM) was developed to strengthen the capacity of Chemistry students at Universitas Negeri Jakarta (UNJ) to serve as health-education agents for T2DM prevention among adolescents, grounded in research on fermented soybean foods. The program commenced with proximate analysis of the fermented soy products, continued with a pre-test, delivery of educational content, scientific-poster training, and a post-test administered to 65 students. Program effectiveness was evaluated using the normalized gain ⟨g⟩, a poster-assessment rubric, and participant feedback questionnaires. Findings revealed that black oncom exhibited the highest protein and fat content among the products examined. Eighteen of the twenty knowledge items attained a high-gain category (⟨g⟩ ≥ 0.7), while posters produced by all 16 student groups received good-to-excellent ratings (score 3 to 4). A proportion of 96.92% of participants reported high satisfaction and expressed willingness to recommend the program to others. These outcomes confirm that the PkM successfully advanced students' comprehension of T2DM and the proximate composition of fermented soy foods from a low-to-moderate level to a high level, while simultaneously equipping them with science-communication competencies for disseminating T2DM-prevention messages to adolescents through scientific posters.
